Kale and Cranberries Salad
Dressing Mix:
2½ cup Dried Cranberries
1½ cup Sundried Tomatoes (Dry)
1 cup Grapeseed Oil
3/8 cup Balsamic Vinegar
6 tsp Salt (Kosher sea salt)
1 tsp Ground Black Pepper
1 cup Sundried Tomato in Oil (Julienned & use oil)
6 heads Kale (Steamed) 8 QT (volume amount)
Procedure:
1 Place all ingredients for dressing mix in mixing bowl & mix well
2 Wash, cut & steam kale leaves. Spin dry to ensure kale is fairly dry
RECIPE YIELD: 9 x 250g
PORTION SIZE: 250g
